According to our philosophy we conduct all works in the wineyards in full respect of nature, use only eco compatible products (zolfo and rame) and do all works by hand: from the pruning, weeding, hoeing to the harvest. When harvesting the grapes are selected by hand and according to the quality of the year destemmed and subequently pressed only partially.
ETNA ROSSO
ETNA BiANCO
Our ETNA ROSSO grows on lavastone at the altitude of 750m ASL and is produced from hand selected grapes of Nerello Mascalese from an wineyard located in Passopisciaro in Contrada Porcaria - Feudo di Mezzo on the northern slopes of Mount Etna .
fermentation: traditional fermentation in little open vats with a high percentage of whole grapes under daily manual punching (pigeage) for 10 to 12 days
maturation: barrique and inox steel vessels for about 15 month untill it gets imbotteled, unfiltered
colour: rubin red, lively with slight nuances of violet
aroma: intense, rich and complex, with note of little red wild berries
taste: jucy, layered, balanced and elegant, typical acid vein that gives sense of freshness, good structure and persistence
alcoholic content: 14 degrees
serving temperature: 16/17 degrees
aging potential: 5-10 years
Our ETNA BIANCO grows on lavastone at the altitude of 650m ASL and is produced from hand selected grapes of Carricante cultivated in a vineyard sourrounded by the lavastream of 1911 in Solicchiata on the northern slopes of Mount Etna.
fermentation: traditional slow fermentation in inox steel vessels at controlled temperature
maturation: inox steel vessels for about 7 month until it gets imbotteled
colour: deep straw yellow, bright and luminous
aroma: intense, rich and complex, fresh and floral notes accompanied by fragnant hints of white fruits followed by sub-notes of eromatic herbs and lavastone
taste: sapid, broad, supported by fragnant freshness and lively juicy, elegant, balanced and good persistence
alcoholic content: 12,5 degrees
serving temperature: 8/10 degrees
aging potential: 5/6 years
